"I was given a some yellow plums so I am trying out a Plum Brandy recipe. I have not made it before. I started the Brandy in August and it will be ready just before Christmas. The recipe makes apprx 1 1/2 quarts of Brandy. It is now December and the brandy is ready. It has a lovely warm colour, very clear and the flavour is quite wonderful. I do not know how potent it is and I do not plan to test it! I will just savour it sip by sip. The recipe is marked 0 cook time but it takes 4 months to reach maturity."

Step by Step Method
Step 1
Prick the plums on all sides with a fork
Step 2
Place in a 3 quart glass jar with a lid
Step 3
Add sugar and vodka
Step 4
Close lid and store in a dark cool place
Step 5
Each week stir the plums in the jar
Step 6
Cloce lid and let it sit until next week, stir again
Step 7
Continue doing this every week for 3 months
Step 8
Let the brandy sit for one more month
Step 9
Strain the finished through cheese cloth and a very fine sieve into a handsome crystal decanter
