"My oldest loves these sandwiches, so I'm including several ingredients. Use good pita bread and can use feta cheese with these. Homemade salad dressing needs to set overnight, can use the mixed cheese blend if you want."

Step by Step Method

Step 1

Salad dressing: Mix together gelatin and cold water.

Step 2

Microwave on 'HIGH' for approximately 2 minutes, until just hard boiling.

Step 3

Mix in vinegar then whisk in oil.

Step 4

Mix in finely chopped red sweet pepper, salt, garlic powder, Worcestershire sauce, coarsely ground black pepper, parsley flakes, oregano, thyme and basil.

Step 5

Refrigerate for approximately 15 minutes before mixing in grated fresh Romano cheese, grated fresh Parmesan cheese and egg substitute, until thick. Refrigerate overnight, to thicken mixture even more.

Step 6

Preheat kitchen barbecue grill (or hot skillet) to medium heat.

Step 7

Salt and pepper chicken breasts. (I would sprinkle on some Greek seasoning spice mix to taste)

Step 8

Grill chicken breasts for 5 minutes on each side, until no longer pink inside.

Step 9

Meanwhile, mix together Romaine lettuce , red cabbage slices and grated carrot into a large bowl.

Step 10

Remove cooked chicken breast from grill and dice chicken breasts into bite sized pieces.

Step 11

Heat each pita bread into microwave oven for 20 seconds.

Step 12

Fill the middle of each pita bread length wise, as a taco, with 1 1/2 cups of lettuce mixture.

Step 13

Top lettuce mixture with approximately 1/3 cup diced chicken .

Step 14

Layer the cucumber, tomatoes and onions to taste.

Step 15

Pour 1 tablespoon salad dressing on top of veggies. Evenly sprinkle with finely grated Fresh Parmesan cheese. (You could also use feta cheese crumbles)

Step 16

Roll sandwich in tinfoil and serve.

We couldn’t have asked for a better dinner! I’ve never had Wendy’s pita sandwiches, but who cares, I bet these are better! I used homemade pita bread and skipped the egg-beaters in the dressing (I don’t have any), increased the seasonings by just a touch, and for the chicken, I used a marinated chicken recipe of mine (I hope you don't mind, Dee). These sandwiches turned out so very good and made everybody happy, happy. Thank you, Dee, for sharing!
