Step by Step Method
Step 1
Sauté the leek and red pepper in oil in a large skillet for 8 minutes.
Step 2
Add the garlic, rosemary and chili flakes; cook another minute.
Step 3
Add the turnip, sweet potato, orange juice/zest, the beans, and cook for 10 minutes, until the vegetables are tender.
Step 4
Add the spinach leaves, season with salt and pepper and cook until the spinach is tender, about 3 minutes (if using kale increase cooking time or until kale it tender).
