"The combination of flavors and colors makes a grand addition to any summer picnic. Mirin is a sweet, low-alcohol rice wine, essentially "cooking sake". Adapted from Chef Virginia Willis' cookbook, "Bon Appetit, Y'All."

Step by Step Method

Step 1

Make dressing: combine mayo, rice vinegar, mirin, soy sauce, lemon juice, and jalapeno in a small bowl and set aside.

Step 2

Prepare salad: halve the cucumber lengthwise, scrape off seeds with a teaspoon & slice the cucumber into 1/8" thick half moons.

Step 3

Place slices in a large bowl and add red and napa cabbages, radishes, arrots, red bell pepper, green onions and sesame seed.

Step 4

Pour over just enough dressing to lightly coat. Season with salt and pepper, and toss well to combine.

Step 5

Serve immediately.
