"I prefer making my own broth instead of using store bought. This recipe is so easy, throw it all in the crock-pot and let it go. This freezes well and is a nice base for many soup recipes."

Step by Step Method

Step 1

Place all ingredients in slow cooker with 8 cups water.

Step 2

Cook on low heat until vegetables are tender, about 6 hours or high heat for 4 hours.

Step 3

Strain into large bowl, pressing vegetables to extract liquid.

Step 4

Let cool 30 minutes; taste and adjust seasoning.

Step 5

Refrigerate uncovered until cool.

Step 6

Cover and refrigerate for up to 3 days or freeze for up to 1 month.

I'm a huge fan of homemade broth - I didn't have any tomatoes, so I used green peppers instead. Super easy, strained twice, once through a regular colandar and then through a tea strainer. Made about 9 cups when all was said and done, which I put in two cup containers and froze for another time.
