This certainly is a lovely version of cornbread; it’s nothing like what I’ve had before. The “upside-down” idea is genius – the onion topping is that extra prize. At first I thought that the batter was heavy, but found that my assumption was incorrect, as the end-result worked wonderfully. It was a great accompaniment for our enchilada meal, but can see it working beautifully with a bowl of soup. Thank you, Dee, for sharing.
