"This is such a quick recipe to put together. Five (5) minutes to make, 10-15 minutes in the oven; then, toss the salad, and top the pizza. Now, I used a store bought foccacia bread; but, you could always make your own, which is very easy. But, this is meant to be a quick fix meal. A perfect summer lunch or light dinner. Add some grilled artichokes, a fruit salad, and a bottle of wine; sit back ... and relax."

Step by Step Method
Step 1
Focaccia ... This is supposed to be a 'quick cooking' recipe, so take advantage of a store bought bread. These days, there some wonderful ones right in your local grocery store. Even Walmart carries them these days; along with Trader Joe's, Costco, Sams, etc. I use a plain focaccia since we are using a herb flavored goat cheese. Lightly brush with olive oil and then rub with the garlic halves.
Step 2
Toppings ... Spread the goat cheese on the bread, depending on the size of your bread, about 4-6 oz - not too heavy. Then top with the tomato halves and scallions.
Step 3
Bake ... You can bake this on a pizza stone or you can use a baking sheet. Since the bread is already cooked; I prefer to use a baking sheet lined with parchment paper or foil for easy clean up. Bake at 350 degrees for 15-20 minutes on the middle shelf, until the tomatoes begin to shrivel, and the edge of the bread is golden brown.
Step 4
Salad ... As your bread cooks, toss the arugula and basil in a bowl with a light drizzle of olive oil and lemon juice (to taste); then, season with salt and pepper.
Step 5
Finish ... Top the warm pizza with the arugula salad; then, and finish with a drizzle of balsamic vinegar. Serve and ENJOY! It is a very light and delicious dish.
