"President Theodore Roosevelt loved celebrating Christmas. Even when he spent some years living the life of a cowboy in the West, he wanted to eat something special for Christmas. He made these potatoes for his prairie companions one Christmas. It had several errors 2 1/2 cups vegetable oil and 2 cups thyme, I have put them at more manageable levels. Now he was cooking over campfire, so he may have deep fried the potatoes and drained them, I'm not."

Step by Step Method
Step 1
Combine the oil, rosemary, thyme, cayenne, and potato chunks in a medium saucepan over medium heat and cook 10 minutes, until the oil is hot and the potatoes have begun to soften.
Step 2
Add the onion, tomato, green onions, garlic, and butter and stir until thoroughly mixed.
Step 3
Cook for 10 more minutes.
Step 4
Remove the pan from the heat and add salt and pepper to taste.
Step 5
Drain off any excess oil and serve the potatoes piping hot.
