"I had to make some minor changes to my diet which included more whole grains. I really like a newer type of wheat called "white whole wheat". This is what I use for this recipe but any kind of wheat flour or combination of flours can be used. With the diet changes which my family doesn't need, I came up with a quick type of flat bread that can be made on the stove top for myself. I later came across something similar on King Arthur Flour website, but this recipe uses less fat. Another consideration for my dietary needs. Quick, adaptable and very forgiving. Step by Step Method
Step 1
Place the flour, baking powder and salt in a mixing bowl and stir to combine.
Step 2
Add the oil and water, mix to make a soft dough. If necessary adjust with flour or water as needed so dough is soft but not sticky. Cover and let rest for 10 minutes.
Step 3
Divide dough into 4, more or less, equal pieces. Dust each piece with flour and roll into a rough circle or oval that is about 1/4 inch thickness. Can also be pressed into round shapes by hand.
Step 4
Preheat a cast iron or other heavy bottom skillet on the stove top about 3 to 5 minutes on medium high heat then spray skillet with non-stick cooking spray to coat.
Step 5
In batches, place one or two flat breads to fit in hot skillet for 2-3 minutes until dough starts to look bubbly and bottom of bread is light brown. Lightly spray top of breads with non-stick cooking spray and flip and fry on the second side for another 1-2 minutes. Transfer to a rack or paper towel to cool slightly before serving.
Step 6
Coat skillet as needed for successive batches and repeat cooking steps.
Step 7
Top with any topping. Suggestions: cream cheese, chives, tomatoes, refried beans, hummus, nut butters or jam. The list of toppings are only limited by your imagination.
Tips
