Step by Step Method
Step 1
To Make the Sauce: Combine the first 4 ingredients in a medium bowl and mix well.
Step 2
Place a wok or stir-fry pan over medium-high heat until hot. Add the oil, swirling to coat the sides. Add the garlic and ginger and cook, stirring, until fragrant, about 20 seconds. Add the sauce and bring to a boil.
Step 3
Add the fish and half of the green onions and return to a boil. Reduce the heat to medium-low, cover, and simmer until the fish is cooked through, about 5 minutes. Add the sesame oil, chile, and tomatoes and cook for 5 minutes more.
Step 4
Transfer to a serving bowl. Garnish with cilantro and remaining green onions and serve.
