Step by Step Method
Step 1
Preheat oven to 350°F.
Step 2
Cook bacon until crisp, about 8 minutes; transfer bacon to a plate lined with paper towels, reserving drippings in skillet.

Crumble bacon.

Add yellow onion, celery, and bell pepper to reserved drippings in skillet.

Season lightly.
Step 6
Add cayenne pepper and increase heat to medium-high.

Cook, stirring often, until vegetables are tender, 5 to 6 minutes.

Stir in rice and cook a bit.
Step 9
Add tomatoes, chicken broth, salt, black pepper, and hot pepper sauce and season to taste.

Spoon into a lightly greased 2-quart baking dish. Cover with aluminum foil, and bake in preheated oven until rice is tender 45 minutes.
Step 11
Let sit out of oven covered for 5 minutes.
Step 12
Top with crumbled bacon.
