Step by Step Method

Step 1

In a large skillet over medium high heat heat 1 tablespoon oil and then add the onion and sausage, cooking stirring until sausage is golden brown (8-10 minutes).

Step 2

While this is cooking peel and cut the potatoes and apple into 1/2 inch dice.

Step 3

Drain sausage and onion and then transfer them to a bowl.

Step 4

Add remaining oil to skillet and then add the potatoes and apple; season with 1 teaspoon salt and some pepper; cooking for 10-15 minutes or until potatoes are tender.

Step 5

Meanwhile mix the ketchup, mustard, thyme, parsley and and 2 tablespoon water together in a cup or bowl.

Step 6

Return onions and sausage back to skillet along with the ketchup mixture and peas; cook, stirring frequently for 5 minutes or until hot and done. Season with salt and pepper if desired.

Loved the flavor in this! I forgot all about adding the peas.....and I even stopped at the store to pick some up. If there is any left I will grab a photo. My son thought this was fabulous, so I'm not sure if he came by to grab some to take for his lunch.
