Step by Step Method

Step 1

Preheat oven to 350 degrees Fahrenheit.

Step 2

Toss all the vegetables together with the oil, season with salt and pepper, and place into a casserole dish or Dutch oven.

Step 3

Top with the chopped sausage and cover.

Step 4

Cook for 30 minutes and remove the cover.

Step 5

Cook for another 30 minutes, uncovered. The vegetables should be al dente, if you prefer them softer, cook for another 10 minutes.

Easy and good served with pasta. I didn't have any garlic infused oil so added 1 clove garlic, minced to the vegetables and used olive oil for the oil. Thanks for sharing!
