Sarasota's Frozen Vegetable Seasoning Mix
"Don't laugh, because this is so easy. But, I admit that I am one of those people who have bought those bags of frozen seasoning blend; which is a mix of onions, red and green bell pepper, and celery. Many times, especially since I am single, but, even if you aren't - you many only need 1-2 tablespoons of onion, celery or bell peppers; and I just hate to cut such a small amount up. Now, I don't use this for fresh (in salads or salsa,etc.); but to use in a sauce, stuffing, sauteed vegetables, soups, etc; this is great to have on hand. Obviously, the celery and the peppers become softer, but for the purpose I am making this for; they will be cooked anyways, and they work perfectly. And you can also customize it to your liking. I use this all the time. Now, I usually make 2 batches; 1 with Italian seasoning, and the other without. So, next time you need a little onion or mix of peppers and celery; this is a great "go to" solution. This is my ratio that I use; but, if you like more onions and less peppers, just adjust it according to what you like."

Step by Step Method

Note: You can use a mix of red, green, yellow, and orange peppers. Use what your local market has on sale.
Step 2
Dice all your vegetables very fine (approximately the same size), then lay flat on a baking sheet lined with parchment paper, cover with saran wrap and freeze. Once frozen, you can add the seasoning; or you can leave it plain. I usually transfer to 2 ziploc bags; 1 seasoned, and 1 not. You can also use a vacuum sealed bag or even a tupperware type of container. They will last a good 3-4 months. Mine never lasts that long. ENJOY!
