"This is so easy, it's hardly a recipe. Dump it all into the slow cooker / crock pot in the morning, set it on low, and eat it for dinner. I use chunky Pace Picante (medium heat) and whatever off-brand taco seasoning packet is in my cupboard. You can use this shredded beef for tacos, burritos, enchiladas, taco salads, etc. Some cuts of roast beef don't shred as well as others... if yours won't shred, pull it out of the slow cooker and chop it up and add it back in to simmer in the sauce. It will taste just as good. Make sure you use a salsa you LIKE!"

Place beef in crock pot (sometimes I spray with non-stick spray; it depends on which crock pot I'm using).

Step 2

Sprinkle contents of taco seasoning packet over the beef.

Step 3

Pour jarred salsa over the beef.

Step 4

Set to low and cook about 8 hours. (Beef will easily shred when it's ready to be served.)

Step 5

Shred beef with two forks and stir well.

We really enjoyed the flavor of the meat...although mine wouldn't shred...and I used a rump roast that I had...there's just two of us and my roast was 1 pound...I let it cook for 8 hours and just cut it into strips...I used hot pace picante sauce...love that stuff...I used it to make beef fajita's...made for "Billboard" and "WOTM" tag games...
