Step by Step Method
Step 1
Preheat oven to 400 degrees F.
Step 2
In an 8x8 inch glass baking pan combine olive oil, lemon zest and thyme. Olive oil should liberally cover the bottom of the pan. If it doesn't, drizzle in a little more.
Step 3
Season with salt and pepper.
Step 4
Bake in oven for 10-12 minutes, checking every few minutes.
Step 5
If it looks like it is getting too brown, remove and proceed to next step. Meanwhile cook pasta, drain, and toss with a pat of butter or olive oil. Set aside.
Step 6
Remove pan from oven, add butter, and move it around a little to melt.
Step 7
Add shrimp, garlic and the thin sliced lemons (don't squeeze them).
Step 8
Toss to coat with oil mixture.
Step 9
Bake for 8-10 more minutes, or until shrimp turn pink and just start to curl. Check often.
Step 10
Serve over pasta, couscous, or rice tossed with additional extra-virgin olive oil and fresh-squeezed lemon with additional lemon wedges for serving.

The ingredient tips, suggestions, variations, facts, questions and answers below are not edits to the original author's recipe. They are not meant to imply any change would improve the recipe. - When selecting shrimp, look for ones with a firm texture and a mild, sweet smell.
- Make sure to use fresh thyme for the best flavor.
- Substitute olive oil with avocado oil - Avocado oil is a great substitute for olive oil, as it has a higher smoke point which allows it to better withstand the high temperatures of roasting. It also has a milder flavor than olive oil, so it won't overpower the other ingredients in the recipe.
- Substitute thyme with oregano - Oregano has a bolder, more pungent flavor than thyme, so it can add an extra depth of flavor to the shrimp. Oregano also pairs well with the garlic, lemon, and butter, making it a great herb to use in this recipe.
Chili Lime Shrimp Replace the thyme with 1 teaspoon of chili powder, and replace the lemon zest with the zest of 1 lime. Replace the lemon slices with lime slices and serve with wedges of lime instead of lemon.
Mediterranean Tomato, Feta, and Olive Salad - This salad is the perfect accompaniment to the roasted shrimp, as it adds a bright and flavorful contrast to the dish. The combination of tomatoes, feta, olives, and a light lemon and olive oil dressing will add a Mediterranean flair to the meal.
Roasted Asparagus with Lemon and Garlic: Roasted asparagus is a great side dish for the roasted shrimp. The asparagus is roasted with a simple combination of lemon juice, garlic, and olive oil, adding a bright, zesty flavor to the meal. The asparagus is a great source of fiber and vitamins, making it a healthy and delicious addition to the dish.
