"This makes a quick, tasty lunch or dinner for one. I came up with this years ago, trying to emulate our local taco shop when we lived in San Diego. I often just serve it in a bowl too. Makes either 1 jumbo burrito or 2 smaller ones."

Step 1

Heat butter over medium heat in saucepan and saute onion until translucent. Stir in rice and spices and cook til heated through.
