"Now, I normally don't like copy cat recipes; but this is pretty good. And, I am also not a fan of Velveeta ... but in this case; it really works. Other cheeses just don't work as well. This is quick and easy to prepare; but, make sure to let it chill overnight if possible or a few hours to firm back up, and to let the flavors develop. Delicious! Serve with your favorite crackers/bread sticks or pretzels. This can also be warmed up as a dip for broccoli, cauliflower, asparagus, or boiled baby new potatoes."

Step by Step Method
Step 1
Cheese ... Add the cheese to a small bowl and microwave 1-2 minutes on medium low heat until the cheese is soft. You don't want it completely melted, just soft and able to stir. Cooking times will depend on your microwave and the bowl you choose. Just check in 30 sec intervals and stir until soft.
Step 2
Add the horseradish, worcestershire, garlic, shallot (grate the shallot over the bowl so you get the juice), mustard, and season with a pinch of salt and pepper to taste. Mix well to combine and add more horseradish if needed. I use 1/4 cup, but you can use less if you prefer. Cover and refrigerate for at least 3-4 hours to firm up; or, overnight if possible to let the flavors develop.
Step 3
Serve ... Crackers or bread sticks are my favorite, and pretzels are also very good; but, you can also reheat and serve warm with: broccoli, cauliflower, asparagus, and even baby red potatoes. Note: I do prefer to lightly blanch the vegetables first and served chilled with the cheese dip. But, that is a personal preference. ENJOY!
