Step by Step Method
Step 1
Combine marinade in large covered bowl.
Step 2
Put roast in marinade and put in fridge.
Step 3
Turn several times for at least 24 hours.
Step 4
Take out and pat dry..
Step 5
In Dutch oven, heat bacon grease.
Step 6
Season liberally to taste.
Step 7
Cover in Flour.
Step 8
Brown on all sides.
Step 9
Place salt pork over the top
Step 10
Bake in 350 degree oven for 3 hours, basting often.
Step 11
Cook until tender, don't overcook because it will become tough.
