"It says use chili of your choice. This was in Texas. It was a bean-less chili lol. I'm using canned but you could use leftover chili which is probably what happened. This is the recipe from 1989 Look Who's In The Kitchen with Methodist ladies and celebrities. I haven't seen this recipe anywhere else."

Step by Step Method

Step 1

Make chili of your choice (cook ground beef and chili).

Step 2

Take some of the chili meat from the pot with a hand strainer.

Step 3

Preheat oven to 350 degrees F.

Step 4

Chop one onion finely.

Step 5

Grate about 3 cups of American cheese and set aside.

Step 6

Fill a 2 quart pot about 3/4 full of water and let it come to a boil.

Step 7

With tongs place tortillas one at a time in boiling water for 1 second; keep water very hot!

Step 8

In 9x9 Pam sprayed Pyrex casserole put a thin layer of chili.

Step 9

In each tortilla as you pull out of water, place 1/4 teaspoon onion, 1 tablespoon chili and 1 tablespoon cheese on each tortilla, fold (roll and put in pan ) side by side unit pan is full. (I would add more stuff)

Step 10

Pour 1 cup chili juice over the top.

Step 11

Bake in oven 10 to 12 minutes.

Step 12

Take out and sprinkle 1 1/2 cups cheese over top and bake 5 more minutes (until cheese melts)

Step 13

Serve immediately.
