Step by Step Method

Step 1

Melt the butter in a large pot over a medium heat.

Step 2

Melt until the butter turns frothy and starts to smell nutty then stir in the leek and the apple. Decrease heat and sauté until soft and fragrant. Pour in the hard apple cider and bring ingredients to a simmer. Add the cream and thyme and stir until simmering. Cook for a few minutes to thicken the sauce. Toss in your washed mussels and toss around until the mussels steam open and are just cooked.

Step 3

Serve.

This is really an Autumn showstopper recipe. The mussels shine without obscuring their plump natural juiciness. At the last minute, while reading the method, noticed that it states "hard apple cider" vs. "apple cider" noted in the list of ingredients. Well, decided to add some apricot brandy to compensate and it came out Fabo! Also added some kosher salt, black pepper, and a wee bit of hot red pepper flakes. Thank you, Tisme, for sharing this lovely recipe.

Well nearly thought this was not going to be cooked, spent 2 hours hunting down apple cider and found it at a store that is closest to home but once I got home realized I forgot to pick up a leek, sorry not going out again so subbed a finely sliced onion and made as per a 2 serve recipe and thoroughly enjoyed and scoffed the lot with some crunchy bread to mop up the broth in the bottom of the bowl. Thank you Tisme made for Pick Me tag game.
