"I am so happy, I just found this recipe again! I've been making the Mennonite gingerbread for years, but I remember Mom's gingerbread as being the perfect comfort food, especially with homemade whipped cream on top. Easy enough for a weeknight treat. Wonderful straight out of the oven, and the next day it will taste even better. Makes a 9 x 9 pan."

Step by Step Method

Step 1

Preheat oven to 350 degrees and grease a 9 x 9 pan, preferably a shiny one.

Step 2

Bring water to a boil and stir in baking soda. Whisk dry ingredients and set aside.

Step 3

In mixer, cream molasses, sugar, shortening and eggs. Add dry ingredients, alternating with boiling water, mixing well.

Step 4

Bake for 35 minutes, or until done.
