"He liked fried catfish served at 4 way restaurant in Memphis Tennessee. Memphis likes spicy food. I'm not sure if theirs was in the 60s. if you want plain don't add the spice and deep fry anyway. It's served with a souffle cup of tartar sauce, a cornbread muffin, macaroni and cheese and collard greens."

Step by Step Method

Step 1

Preheat a deep-fryer to 375 degrees F.

Step 2

Mix the cornmeal, paprika and cayenne in a large bowl.

Step 3

In a separate bowl, add the buttermilk and the hot sauce.

Step 4

Season the catfish with salt and pepper.

Step 5

Dredge in the buttermilk and then the cornmeal and spice mixture.

Step 6

Drop carefully in the hot oil.

Step 7

Fry for 4 minutes until crisp.

Step 8

Remove to a paper towel lined sheet tray.

Step 9

Season with salt and pepper to taste.

Step 10

Serve with lemon wedges and a tablespoon of tartar sauce.

Great fish! I used a frying pan to cook the fish which had a lot of oil which was heated up before adding the fish. I did cut the spices down a bit, but this was wonderful fish! Thanks for sharing!
