Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Beat two eggs to a light foam.

Step 3

Add pumpkin, sugar, orange marmalade (chopped fine), salt (they smoked, needed more salt), and light cream.

Step 4

Mix well and pour into pie crust.

Step 5

Bake for 45 minutes in oven until firm.

Ten stars! If you're looking for something that's different from the usual cinnamon/nutmeg scented pumpkin pies, then this one is for you! I LOVED the orange flavor imparted by the marmalade. It's there, but not overpowering. I used an all-fruit and no sugar addded marmalade, which kept the sugar level down a bit. And used a 50/50 mix of evaporated milk and half n half. This will replace (or add to) my usual holiday pumpkin pie!
