Step by Step Method

Step 1

Place potatoes in a saucepan; cover with water, and bring to a boil.

Step 2

Reduce heat; simmer 13 minutes or just until tender; drain.

Step 3

Rinse under cold water; drain well.

Step 4

Place in a bowl; cover and chill 30 minutes.

Step 5

Add celery and next 3 ingredients; toss well.

Step 6

Combine vinegar and next 6 ingredients in a small bowl; stir well with a whisk.

Step 7

Pour over potato salad; toss gently.

Step 8

Cover and chill at least 1 hour.

Step 9

Toss gently before serving.

I normally prepare southern potato salad, and I was pleasantly surprised at how much I enjoyed this recipe. I liked that it wasn't dripping in dressing, but still offered great flavor. The only change I made was to wedge the potatoes after cooking. I will definitely make this again and it goes into my Best of 2016 recipe file. I served this with your marvelous-mustard-ribs-#21600.
