"This is a basic low-fat white sauce I use for quite a number of recipes. I use this as a base for a cheese sauce, continuing with low-fat cheese. I also add herbs to this base and use it as a sauce for pot pies. It is also a great base for creamed pasta sauces, just season it up as desired and toss it with cooked pasta."

Step by Step Method
Step 1
Melt butter over medium-low heat in a sauce pan.
Step 2
Stir in flour; cook for one minute while stirring.
Step 3
Increase heat to medium-high and whisk in milk a bit at a time.
Step 4
Add salt and pepper; bring to a boil.
Step 5
Lower heat to medium-low; cook until thickened, about 5 minutes, whisking continually.
