"You can't use the brie rind in this recipe, it's too hard. Make sure the 3 large ripe tomatoes are bite size pieces. Different colors would be fun. Season to taste. Some folks use more olive oil, I'm not but you can."

Step by Step Method
Step 1
Cook pasta in heavily salted boiling water until al dente.
Step 2
Drain.

Pour oil into a large heatproof bowl and add garlic, tomatoes, cheese, basil and a grinding of fresh pepper.
Step 5
Cover and let marinate for at least an hour on the counter, it has to be room temperature for cheese to melt right.
Step 6
Drain pasta and add immediately to the bowl.
Step 7
Toss everything with tongs until the cheese has just started to melt.
Step 8
Divide among bowls and serve at once.
Step 9
Season to taste.
