Step by Step Method
Step 1
Preheat oven to 350 degrees F. Set oven rack to bottom position. Fit pastry into pie plate; flute ends as desired.
Step 2
In a medium bowl whisk eggs with next 8 ingredients until well combined (about 20 seconds). Mix in coconut. Pour into pie shell.
Step 3
Place the pie plate onto a baking sheet.Bake for 40-50 minutes or until a knife inserted near the center comes out clean. Cool to room temperature. Refrigerate any leftovers.
