Kana's Chicken Salad
"I am partial to chicken salads that aren't mashed up into cat food, I chop my chicken into small cubes and and cut the celery into half moons for the texture I prefer, but you're making it for yourself so improve all you like as you have to eat it. ;-) Obviously can be made with leftover, or store bough rotisserie chicken. #recipe35386"

Step by Step Method
Step 1
Toss all ingredients in large bowl mixing thoroughly but gently, chill before serving.
Step 2
Note: To poach chicken, boil in water for 30 minutes with a few chunks of onion, carrot and celery.
Step 3
One large chicken will yield about 4 cups of meat. When cooled remove chicken from bone, chop into pieces no bigger than a 1/2 an inch.
