"My mum used to make Lemon Cordial all the time for us when we were young. This is a different, and modern take on the old classic recipe. So refreshing during summer. I found this in the feast magazine and will be using this quite often over summer. This cordial will keep well in the fridge for at least 2 weeks. I like to sieve it before pouring into the bottle. Makes 1.2 L cordial for about 12 L prepared drink"

Step by Step Method
Step 1
Place lemon zest, juice and squeezed halves, lime leaves, ginger and caster sugar in a large heatproof bowl. Pour over 1 Litre boiling water and stir until dissolved. Cool slightly, cover with plastic wrap and refrigerate overnight.
Step 2
Discard lemon halves, lime leaves and ginger. Stir in tartaric acid and pour into sterilised bottles. (This is were I sieve it).
Step 3
Chill until needed and shake before pouring.
Step 4
You’ll need 2-3 tablespoon's to flavour a glass of water or soda water with ice cubes.
