"She's one of my Mom's favorite chefs. Many people like this recipe a lot. She doesn't skimp on her ingredients and she says: The flavors will improve if you allow the salad to sit at room temperature for 30 minutes. I'm not writing that in recipe. Folks lose their dang minds with statements like that. lol She also has a basin with cracked ice her food sits on. Some folks topped this with fresh baby spinach."

Step by Step Method

Step 1

Preheat the oven to 400 degrees F.

Step 2

Peel and devein the shrimp.

Step 3

Add seasoning to taste into oil and mix.

Step 4

Add shrimp and mix.

Step 5

Place them on a sheet pan.

Step 6

Spread the shrimp in one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through and allow to cool for 3 minutes.

Step 7

Meanwhile, make the sauce.

Step 8

In a large bowl, whisk together the mayonnaise, orange zest, orange juice and vinegar.

Step 9

When the shrimp are cool, add them to the sauce and toss.

Step 10

Start light on the dill and capers, you can always add more.

Step 11

Add the dill, capers, and red onion and toss well.

Step 12

Season to taste now.

Step 13

Chill and serve at room temperature.
