Step by Step Method

Step 1

Place the lettuce or spinach leaves onto a large plate.

Step 2

In a large bowl combine the chicken with celery, cranberries and pecans.

Step 3

In another bowl whisk together mayonnaise with orange juice, zest and honey; add to chicken mixture then toss to combine.

Step 4

Season with salt and pepper.

Step 5

Mound onto the lettuce or spinach leaves.

mmm lovely different textures, chewey cranberries, crunchy pecans, celery and romaine, soft juicey chicken breast and wonderful flavours, loved the orange honey dressing. I just made half a recipe for the two of us and cut the honey back to a tablespoon. A very delicious summery salad !
