"Jane Winterston ran a sporting house and restaurant in early Abilene, Kansas. One of the favorite dishes was hominy. It was a favorite of Will Bill Hickok. “Melt a generous amount of butter in a frying pan. Add a cup of hominy and mix until covered with butter. Chop up pimentos as finely as possible. Add to hominy and salt and pepper to taste.”"
