"Made this tonight and it was delicious. And very heart-healthy. Sodium content listed is way off. When using unsalted chicken broth, there is no more than 100 mg per cup. I use College Inn unsalted chicken stock, and it only has 50 mg per cup. So since this recipe has 4 cups of stock and serves 4, the sodium content should be around 50 mg per serving."

Step by Step Method

Step 1

Put chicken broth in small saucepan and bring to a boil. Add orzo and cook 10-12 minutes or just until tender.

Step 2

In the meantime, place 2 teaspoons olive oil in small skillet on medium-low heat. Add peppers and onions. Saute till onions are translucent. Add fresh thyme and saute 1 minute. Add minced garlic and saute 30 seconds. Take off heat.

Step 3

When orzo is cooked, drain in a mesh strainer and return to saucepan. Add sauted veggies, lemon juice, 2 tablespoons olive oil, black pepper and chopped basil and parsley. Stir well to combine.

Delicious simple dish and thoroughly enjoyed. I scaled back for 1 serve and a very generous one at that, unfortunately I had to use dried herbs as the weird weather and me with mobility issues the herb garden is in bad shape and I only had a red capsicum/bell pepper so used half of that otherwise made as per recipe thank you LoveinRetirement, made for Alphabet Soup Tag Game.
