  • Make sure to use pureed pumpkin, not pumpkin pie mix, as the latter contains sugar and spices.
  • Toasting the hazelnuts and removing the skin will help bring out the flavor of the nuts.

  • Substitute the buttermilk pancake mix with whole wheat pancake mix: This substitution provides a healthier alternative with more fiber and nutrients, while still providing a delicious waffle.
  • Substitute the vegetable oil with applesauce: This substitution adds natural sweetness and reduces the amount of fat in the recipe, making it a healthier option.

Chocolate Chip Hazelnut Waffles Replace the allspice with 1 teaspoon of cinnamon. Add 1/2 cup of semi-sweet chocolate chips to the dry ingredients. Cook as directed in your waffle iron instructions.

Pear Compote: A sweet and tart compote made with fresh pears, cinnamon, and nutmeg. It's the perfect complement to the rich, nutty flavor of the waffles and adds a festive touch to the dish.

Maple-Glazed Bacon: Thick-cut bacon glazed with a sweet and savory maple syrup mixture. The salty bacon and sweet glaze is a delicious combination that complements the waffles and pear compote perfectly. It adds a crunchy texture and smoky flavor to the dish that is sure to be a hit with everyone!
