Step by Step Method

Step 1

In a medium pot over high heat, add the rice, broth, and coconut milk and bring to a boil. Once boiling, turn the heat to low and cover with tight fitting lid

Step 2

Let cook for 20 minutes.

Step 3

Turn off heat, and without opening the lid, let it sit for another 10 minutes to finish steaming.

Step 4

Fluff the rice with a fork and mix in the pineapple, soy sauce, sesame oil, brown sugar, macadamia nuts and scallions

Came out creamy and tasty. I did cut the recipe in half, but found that the liquid to rice ratio was off, so I wound up increasing the liquid while it was cooking to keep it from crusting to the bottom of the pan. Otherwise, followed all as directed, except for leaving out the macadamia nuts. I think the brown sugar can be skipped seeing that the pineapple brings in the sweetness. We enjoyed this rice as our side with dinner tonight. Thank you, Dee, for sharing. Made it for FYC. .
