Step by Step Method
Step 1
Prepare grill (medium heat).
Step 2
In a small cup or bowl whisk together the oil and thyme.
Step 3
In a large bowl toss the vegetables (sweet potatoes - bell pepper). Drizzle with 1/4 cup of the oil mixture and toss.
Step 4
Grill vegetables until tender, turning often (15-20 minutes) - the peppers and onions cook faster than the potatoes. A grill basket works well for this recipe.
Step 5
Whisk vinegar into remaining oil mixture; season to taste.
Step 6
Drizzle mixture over the vegetables.
