Step by Step Method
Step 1
Peel eggs, separate the whites and the yolks. Dice the whites into bite-sized pieces. Set aside.
Step 2
Mash the yolks in a small bowl with a fork or press through a mesh sieve. Set aside. Keep both whites and yolks separate for now.
Step 3
In a small saucepan, melt butter. Whisk in flour, salt, pepper and milk. Heat until it thickens or boils for approximately 1 minute (or until thick).
Step 4
Remove from heat; stir in diced egg whites. (Taste, and add more salt and pepper, if needed).
Step 5
Toast bread, and slather with butter.
Step 6
Pour creamy white sauce over top of the butter. Sprinkle with mashed egg yolks.
