"Another super-easy, no-cook ice cream. Fresh figs. Fresh Mint. What more needs to be said? NOTE: I don't peel my figs unless the skin is really thick and tough. The end result isn't as pretty, but it tastes great! COOK TIME IS CHURNING TIME"

Step by Step Method
Step 1
In a large bowl, whisk first 5 ingredients together until smooth and blended. Cover and chill 30 minutes.
Step 2
Pour milk mixture into the freezer container of your electric ice-cream maker, and freeze according to manufacturer's instructions. (For my Cuisinart, it's about 30 minutes)
Step 3
Remove the container from the ice-cream maker and place in freezer for 15 minutes.
Step 4
Meanwhile, combine figs, lemon juice, sugar, and chopped fresh mint. Stir the fruit into prepared ice-cream mixture.
Step 5
Transfer to an airtight container and freeze until firm, about 1 to 1 1/2 hours.
