"I've read about Egglife wraps and decided to try them when I spotted them (for the first time) in the refrigerated dairy section at my local Safeway grocery store. I didn't have a lot of expectations for how this would turn out, but I was pleasantly surprised. The wraps don't have the exact same texture or taste as noodles -- the texture isn't bad though, it held together similar to a traditional lasagna, and the wraps tasted like the sauce (not eggy, like I was worried). My kids liked it and had seconds. The use of Egglife wraps instead of traditional pasta sheets helps reduce the carb content of this lasagna lasagna AND makes it gluten-free (make sure all of the other ingredients are also gluten-free, if necessary). Additionally, the sugar-free tomato basil tomato sauce makes this a little healthier--but you can use whatever tomato sauce you're comfortable with. However, it's important to note that the exact carb content may vary depending on the specific brands and ingredients you use. If you have specific dietary requirements or restrictions, it's always a good idea to check the nutritional information on the products you use and adjust the recipe accordingly. Step by Step Method
Step 1
Preheat your oven to 375°F (190°C).

In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.

In a medium-sized bowl, combine the cottage cheese, egg, grated Parmesan cheese, and Italian seasoning. Mix well until all the ingredients are fully incorporated.

Take an oven-safe baking dish spray it with non-stick spray, then spread a thin layer of the marinara sauce on the bottom.

Place a layer of Egglife wraps over the sauce, covering the entire bottom of the dish. You may need to cut the wraps to fit the dish properly.

Spread a layer of the cooked ground beef over the wraps, covering them evenly.

Sprinkle a layer of shredded mozzarella cheese over the ground beef.

Spoon a layer of the cottage cheese mixture over the mozzarella cheese.

Repeat the layers by adding another layer of Egglife wraps, marinara sauce, ground beef, mozzarella cheese, and cottage cheese mixture. Continue layering until you have used all the ingredients, ending with a layer of tomato basil sauce and shredded mozzarella cheese on top.

Cover the baking dish with aluminum foil and place it in the preheated oven.

Bake for approximately 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the lasagna is hot and bubbling, and the top is golden brown.

Once cooked, remove the lasagna from the oven and let it cool for a few minutes before serving. This will allow the lasagna to set and make it easier to cut into portions.
