"A simple salad dressing that uses only 4 or 5 ingredients. Perfect over a taco or Mexican type of salad. It is easy and quick to prepare. One of my favorites, is a salad which consists of; mixed greens, chicken, black beans, corn, avocado, onion, olives, etc. - and this is my favorite dressing for this. Add a few tortilla chips, and dinner is served. The dressing is also a great condiment for tacos, burritos, and quesadillas. It is lighter than a salsa, but all the same flavors. This recipe can easily be doubled."

Vinaigrette/Dressing ... Add everything to a small bowl and whisk to combine. I love the tangy flavor of the mustard, but, this can easily be made without the mustard.

Also, if you like a smooth consistency, you can puree in a blender or small food processor until smooth. Refrigerate until ready to use. Letting it set a few hours, only makes it better; but, not necessary.
Step 3
Serve and ENJOY! ... Use on your favorite salads or Mexican recipes.
