Step by Step Method
Step 1
Spray crockpot with cooking spray.
Step 2
Heat oil in stock pot.
Step 3
Add carrots, celery, mushrooms, onions and garlic and cook for 3 minutes or until they start to turn transparent.
Step 4
Add salt and pepper to taste.
Step 5
Add cinnamon and cumin directly to the vegetables and stir.
Step 6
Cook for an additional 2 minutes to bring out spices.
Step 7
Add lentils and saute an additional 2 minutes.
Step 8
Put in crockpot.
Step 9
Add broth and bay leaf.
Step 10
Turn crockpot on low for 2 hours.
Step 11
Add water if needed.
Step 12
Make sure lentils are cooked through.
Step 13
Remove bay leaf.
Step 14
Just before serving, add spinach and lemon juice.
Step 15
Stir and let spinach wilt.
