"This is a flat cookie that has a lovely crisp edge, but bends before it breaks - unlike crunchy cookies, which snap cleanly in two. Raisins both enhance the cookie's flavor and add additional moistness, and nuts lend their own distinct, toasty taste. Source: The King Arthur Flour Cookie Companion."

Step 1
Preheat oven to 375-degrees F. Lightly grease (or line with parchment) two baking sheets.
Step 2
In a large bowl, cream together the butter, shortening, sugars, extracts, spices, salt, and baking soda, beating until fairly smooth. Beat in the egg, scraping the bowl, then beat in the corn syrup and milk. Stir in the oats, flour, raisins, and nuts.
Step 3
Drop the dough by the tablespoonful onto the prepared baking sheets. Bake the cookies for 11 minutes, until they're a light golden brown. Remove them from the oven and transfer to a rack to cool. Makes 45 cookies.
