Creamy Sausage, Cabbage, & Noodle Skillet Dinner

"Quick, easy, inexpensive; and, definitely - comfort food. Now, you can use any sausage you want - smoky beef, turkey, or chicken, kielbasa; or, any spicy sausage. Simply use what you like - personally, I use what is on sale at the time. I have a couple of versions of recipes using cabbage and sausage; but, none using cream cheese. The cream cheese really adds a nice unexpected flavor. This makes a perfect 'one pan' week night dinner."

Step by Step Method
Step 1
Noodles ... Cook your noodles according to package directions, in plenty of salted water. Then, drain; leaving just a little water in the pot, so they don't stick. And, keep them covered off the heat.
Step 2
Sausage ... As the noodles cook; prepare the rest of the dish. Saute the sausage rounds in half of the olive oil on medium high heat - in a non-stick pan. You want the rounds to get golden brown on both sides. But, remember, the sausage is already cooked; you are just browning it. This should only take 2-3 minutes per side.
Step 3
Cabbage and Onions ... Slide the sausages over to one side of the pan, add the remaining oil; and add the onions, cabbage, garlic, red pepper flakes, salt, and a little black pepper. Mix everything together; and cook just a couple of minutes. Then, combine the cabbage mix with the sausages; add the chicken stock, thyme; and stir to combine. Simmer on medium low to medium heat, approximately 5-7 minutes, stirring often. You want the cabbage and onions to be tender; but, still have some texture.
Step 4
Cream ... In a small bowl, mix the mustard and butter with the cream cheese. Then, add the mix to the center of the pan; and combine with the sausages and cabbage. Cook just until the cheese is melted.
Step 5
Finish ... Add the noodles and parsley; and, toss until they are heated through. Also, they will soak up most of the liquid. And, taste for seasoning. You probably won't need to; but, everyone's taste is different.
Step 6
Serve and ENJOY! ... Family style, right out of the pan. I like to add a tomato salad on the side; and, call it a 'simple 1 pan dinner.' Quick, easy, and inexpensive!
