"Perfect for steamed artichokes, chilled asparagus or a platter of steamed vegetables; try poached salmon or any fish, or seared scallops. And use it as a dressing on a seafood sandwich or in a grilled vegetable pita. And last, a great condiment on a fresh pea or zucchini soup. There are just so many uses for this dip, and it is so easy to make. You can also change this up by adding fresh basil vs dill for a different taste. It will last about 4-5 days in the refrigerator."

Step by Step Method

Step 1

Yogurt ... Greek yogurt is a bit thicker than "regular" yogurt, but you can get that thick texture very easily. Add the yogurt to cheese cloth or a coffee filter and place in a colander and then over a bowl. Let it drain at least 8 hours, or over night. Most of the liquid will drain out and it will become very thick.

Step 2

Sauce ... Add the yogurt, lemon juice and zest, garlic, sugar, basil, salt and pepper to a small bowl and mix well. Serve and ENJOY!

I made it to have over baked salmon substituting the basil for dill. I ended up pouring some over my sugar snap peas too and it was delicious. This can be used on so many things. I can't wait to experiment with it!
