"Creamy mashed potatoes, with garlic and chives. I make these when I don't plan on making a gravy or sauce to put over my regular mashed potatoes. I use about 2/3 of a cup of half-n-half, but I always start with about 1/2 of a cup and add more as I go until I'm happy with the consistency (and so they don't get too wet and sloppy)."

Step by Step Method
Step 1
Place potatoes and crushed garlic into a pot, then cover with cold water. Bring the potatoes to a boil, reduce heat, cover and cook for about 25 minutes or until potatoes are just fork tender.
Step 2
Strain the potatoes and the garlic into a colander, then dump into a large mixing bowl.
Step 3
Add the cream cheese, cubed butter, sour cream, half-n-half and salt to the bowl.
Step 4
Using a hand mixer, beat on low speed for 1 minute, then increase to medium speed, beating until potatoes are smooth.
Step 5
Stir in the chives.
Step 6
Taste! Adjust seasoning by adding additional salt and black pepper, to taste.
Step 7
Transfer mashed potatoes into a serving bowl. If using the serving butter, make a shallow well and place the 2 Tablespoons of butter into the well to melt.
