"This is a pretty famous salad. You can use bacon and feta or blue cheese, but it won't be quite the same. As always season to taste. Some folks didn't like so much pepper, you do you. It's the dressing that makes the salad."

Step by Step Method

To make the house dressing extra creamy, slowly add the mixed oils. VERY SLOWLY. She cannot stress that enough.

In a blender, add all ingredients but the oil and process until smooth. Add the mixed oils very slowly to a running blender.

Store in an airtight container in the refrigerator for up to a week or until ready to serve.

For presentation:

Put a line of ingredients on top of lettuce in the bowl.

Salad:

In a large bowl, toss together lettuce, onions, tomatoes, gorgonzola cheese, prosciutto and avocados.

Drizzle on top as much dressing as you would like and toss to coat.

Serve immediately.
