Great potato salad - so different than we're used to! I knew I would love it after tasting the cilantro crema, which was made the day before. Oh my goodness, was this delicious or what? I left out the corn (forgot, actually) but it wasn't missed at all. Mixing in the crema without destroying the potatoes was a bit difficult, so next time will just cut the potatoes like regular potato salad. So yum - thanks for sharing!

The simple ingredients in this salad is just perfect with your Mexican Cilantro Lime Crema! Lots of flavour! I did not add the corn (DH preference). Thank you for sharing both these recipes!
