Step by Step Method

Step 1

Preheat broiler.

Step 2

In a bowl combine the first 3 ingredients (chili pepper - cheddar) plus a few grinds of pepper; mix well and set aside.

Step 3

To make the garlic butter: in a bowl combine the butter with the garlic, mix well.

Step 4

To assemble the toasts: on one side of 4 slices of bread, spread half of the butter and then place the bread slices on a baking sheet, buttered side up and broil until golden brown (2 minutes); remove from oven and place baking sheet on a heat proof surface.

Step 5

Flip the bread slices and butter the other side. Divide the cheese and scallion mixture equally among the buttered slices, pressing it into the bread. Broil for 2 minutes or until cheese is bubbly. Remove from oven and cut each slice diagonally and sprinkle with the red chili flakes.

Step 6

Delicious with a bowl of tomato soup!
