"This is fantastic, i grabbed it for safekeeping, from Pamela at food. I make it often, always two batches, one for the next night and one to have ready in the freezer. Just take it out in the morning to defrost and it marinates at the same time."

Step by Step Method
Step 1
Combine lime juice, lime zest, honey, ginger, and garlic in a large ziploc bag.
Step 2
Add chicken and combine well.
Step 3
Squeeze out as much air as possible and freeze.
Step 4
Remove from freezer the night before serving and defrost all day in the fridge; chicken will marinate as it defrosts.
Step 5
Transfer thighs to a roasting pan and bake at 350 for 25-30 minutes, or until chicken is cooked through.
Step 6
You can also cook this chicken on the BBQ/grill if desired.
